Vegetable Quiche Cups to Go

Materials:
- 12-cup muffin pan
- foil baking cups
- Pam Spray
Ingredients:
- 1 pkg(s) Frozen chopped spinach
- 3/4 cup(s) Liquid Egg Substitute
- 3/4 cup(s) Shredded Reduced-Fat Cheese
- 1/4 cup(s) diced green bell pepper(s)
- 1/4 cup(s) diced onion(s)
Optional Ingredients:
- 3 drop(s) hot-pepper sauce
Cook Time: Approx. 25 minutes
- Preheat oven to 350 degrees Fahrenheit
- Microwave frozen spinach for 2 1/2 minutes on high and drain excess liquid.
- Line muffin pan with foil baking cups.
- Spray baking cups with Pam.
- Combine the egg substitute, cheese, peppers, onions, and spinach in a bowl.
- Mix well.
- Divide mix evenly among the muffin cups.
- Bake for 20 minutes, until a knife inserted in center comes out clean
