Eggs Florentine
Preparation Time: Approx. 10 Minutes

Materials:
- Baking Sheet
- Medium skillet
- Small sauce pan
- Small Bowl
Ingredients:
- 1 Egg
- 1 tsp(s) Salt
- 1/2 cup(s) Spinach
- 1 tbsp(s) Olive oil
Cook Time: Approx. 5 minutes
- Boil 1 cup of water in skillet
- Add salt and slowly stir for approx. 1 minute
- Crack egg into a small bowl and slowly pour the egg into the boiling water
- Slowly and carefully stir the egg in the water. DO NOT BREAK THE YOKE
- Boil the eggs for approx. 3 minutes after the egg has formed into the poached shape and texture
- Sautee the spinach with the olive oil
- Place the poached egg ontop of the spinach
- Serve while the egg is still fresh
